fun food for the mind and body

Well as you know I am fighting to come back from cancer treatments. I have not been able to eat food for 10 months. So I think I will start sharing my recipes with the world. What the heck if I can’t eat them you can.
One pan Fruit Pancakes
(sort of pastry, trust me it will blow your mind)
Skillet size – Preference cast iron (but you can use anything as long as the handle is all metal and oven proof) and 8 inches
Use 1.5 of the ingredients if the skillet is 10 inch and double them if the pan is 11” or 12”
This recipe will make you a hero at the breakfast table.
1. Pre heat the oven to 375
2. Whisk together in a bowl 1 cup milk, three eggs (BEST IF ROOM TEMP), ¾ cup all purpose flour, and 2 tablespoons of granulated sugar
3. Melt 2 tablespoons of butter in an oven proof skillet (I like cast iron) on med to high heat; add to the hot skillet the following: 2 Granny apples (or any apple) cut up into to 3/8 inch wedges, ¼ teaspoon cinnamon and 1 tablespoon of granulated sugar.
4. Cook for 2 to 3 minutes stir gently occasionally. (Very important, do not cook the apples longer than 3 minutes, there is no leavening agent in this dish, it relies solely on the moisture from the apples to rise. If you cook out the moisture it will not rise, AKA dog food).
5. Remove the pan from the heat and pour the batter over the apples (be careful the butter does not splash on you, do it slowly).
6. Move the apples around in case they all went to the sides when you poured in the batter. Immediately place the pan in the oven and bake for about 30 to 35 minutes or until the batter is golden brown. If you did not cook the moisture out of the apples in step 4 it will be very puffy and probably rise well above the pan. It is a great picture
7. Remove from oven and sprinkle with powdered sugar. BE VERY CAREFUL HERE AS THE PAN IS HOT AND IF CAST IRON IT WILL BE HOT FOR SOME TIME TO COME.
8. Slice and plate.
Be sure everyone is at the table when you bring it out as it will settle somewhat and lose it’ piazzas quickly
